There are some applications such as Safari and Mail that I use all the time and they are always open. You can set applications to open automatically when you log in to your account.
To set an application to open automatically at login:
Make sure the application is on the Dock. If it doesn't have a permanent home on the Dock, open the application.
Click and hold on the Dock icon of the application you want to set up>
Depending on what version of OS X you have, you will either see Open at Login as a choice, or you will need to select Options first and then Open at Login.
The next time you log in to your account, the chosen application will open as part of the login..
Note: If you only have one user account, your Mac is probably set to log in to your account as part of the startup process when the Mac is turned on. In this case, your login applications will start at startup.
To turn off auto open of an application at login, follow the instructions above which will uncheck "Open at Login".
